 Pan-fried Chili Garlic Staffed POMFRET


INGREDIENTS


·        2 large size Pomfret fish
·        6 tsp -Kashmir chili powder
·        1.5 teaspoon - Coriander seeds
·        3 teaspoon - Turmeric powder
·        3 tablespoon zinger garlic paste
·        1 table spoon onion paste
·       
5/6 Cloves of garlic very thinly chopped
·        1 inch piece of Cinnamon
·        1 teaspoon - Tamarind paste
·        1 cup - Vinegar
·        3 tablespoon - shredded Coconut
·        Salt and sugar to taste
·        1 teaspoon Black Pepper
·        1 teaspoon Red Chili powder
·        1 tablespoon Coriander powder
·        ½ tablespoon Garam Masala
·        3 tablespoon Suji
·        1 tablespoon Cumin seeds
·        7 to 8 Pepper corn
·        2 to 3 Green Cardamoms
·        1 to 1 and ½ cup Oil to fry
·        3 tablespoon flour
·        2 tablespoon lime Juice

·        1 cup chopped coriander
·        ½ cup chopped spring onion
·        2 teaspoon green chili chopped


Process-:

First take a bowl add vinegar and 1 tablespoon salt and mix them with the fishes and rest for 20-30 minutes. After that take the fish from the bowl and clean pat dry, Make slit on the fish with a knife from mouth to tail in round shape (Don't apply too much pressure) and remove the unnecessary part of fish and discard them. This slit portion helps you to easily stuff the mixture in the pomfrets. Blend all the above listed ingredients (except oil, suji and flour, chopped garlic cloves, chopped spring onion,) and salt in a grinder. (Add little amount of vinegar also in this mixture.)  Make a soft and smooth thick paste. Add garam masala with the paste and mix well with paste. Now stuff the paste into the pomfret. Also cover the pomfrets with this mixture on the outer part. Rest them for about an hour.

Take a bowl, add suji , chopped spring onion ,chopped garlic ,flour and salt & sugar as required, chili powder, black pepper powder and add water (as required amount) make a thick batter . Now apply this on each side of fish.


Now add oil in a pan. Keep the gas on low flame and wait till it splutters. Add the pomfrets to the pan. Fry the Pomfrets from both sides for 15 minutes or until crisp, brown in color from both sides. Enjoy eating this dish with salad, sauce, lime and your smile.
