Juicy Moist Rosemary lamb
with
Oyster sauce & vegetables


Ingredients
·         Lamb (medium pieces) -150 gram
·        White wine and vinegar mixture- ½ cup
·        Chopped carrot-1/2 cup
·        Salt and sugar- As required
·        Garlic cloves chopped- 2 tablespoon
·        Chopped onion- 3 tablespoon
·        Fresh Beans chopped-1/2 cup
·        Spring onion chopped- 2 table spoon
·        Mushroom chopped-10 gram
·        Milk- 2 tablespoon
·        Refined oil- 4 tablespoon
·        Beetroot- ¼ cup
·        Butter- 2 tablespoon
·        Tomato chopped- 2 tablespoon
·        Cauliflower chopped- 2 tablespoon
·        Cabbage chopped- 2 tablespoon
·        Capsicum chopped- ½ cup
·        Cornflower- 2 table spoon
·        Tomato puree-1/4 cup
·        Egg- 2
·        Bay leaf- 1
·        Black pepper powder- 2 teaspoon
·        Green chili chopped- 1 tablespoon
·        Oyster sauce- 2 tablespoon
·        Rosemary- 2 teaspoon
·        Red chili paste- 1 teaspoon
·        Coriander powder-1/2  teaspoon
·        Fenugreek powder- 1/2 teaspoon
·        1 teaspoon lime juice
·        1 teaspoon honey
Process-
Clean the lamb pieces properly. Now separate the meat from bone.  Marinate the boneless lamb with 1 and ½ teaspoon rosemary and with white wine and vinegar mixture, lemon juice. Leave it for 1/2  hour.
Now add butter and 1 tablespoon cornflower in a pan and roast it till red. Add stock in it.( for stock-, ¼ cup tomato puree, 1 bay leaf, salt, black pepper, add them all and make a paste. Now add the paste in 4 cup water and add the bones of meat in it and boil well and when it comes in half. Filter it and your stock is ready). Stir well and cook for 3-5 minutes until well combined. After that remove the mixture from gas and keep aside. Name it brown sauce.
Now take a pan, add oil in it when oil come to splatter then add coriander powder, black pepper powder and pinch of Fenugreek powder & pinch of sugar. When smell of spices comes out add chopped onion, garlic and fry it properly. After that add chopped vegetables in it and mix well and deep fry the vegetables.
Now prepare dough with milk, cornflower, salt, egg yolk. Dip the lamb pieces in the dough and fry it till golden color.  

Now take a new pan, add oil. Oil comes to splash add honey, lamb pieces, vegetables, mushrooms and red chili paste. Mix well and add ½ teaspoon rosemary in it and whip well. Now add marinated portion of meet mix well and add the brown sauce. Stir and continue cooking and whisking until gravy boils .Season with salt and pepper if necessary.
Leave it for seethe. Add oyster sauce in it and Cook perfectly.  Now incline the gravy very consciously. When the gravy inclined properly sprinkle spring onion over the dish and cover it for aroma. Serve hot and with your sweet smile.
