Aromatic Bengali-style Gondhoraj Chicken Fry garnished with kaffir lime leaves and lemon slices

That's where this Gondhoraj Chicken Fry comes in. Infused with the citrusy punch of kaffir lime (Gondhoraj Lebu), this Bengali-style crispy chicken fry takes the humble starter to a whole new level. Ingredients-:

1.      Boneless Chicken Strips -700  gram

2.      Gondhoraj Lime/ Kaffir Lime Juice of 4 and Zest of 3

3.      Ginger garlic paste- 2 teaspoon

4.      Egg bitten -2

5.      Corn flour -1 cup

6.      Salt to taste

7.      Icing sugar- ½ teaspoon

8.      Black pepper powder- 2 teaspoon

9.      Coriander leaves chopped- 1 cup

10.   Fresh cream- 2 tablespoon

11.   Lime Leaf-5/6 (tear in pieces)

12.   Oil -3 cups

Method-:

 First Marination-:

    • Clean and dry the chicken pieces. Now add the lemon juice, salt, black pepper powder, ginger garlic paste, sugar, coriander leaves, lime leaves with the chicken.  Cover it and rest for at least 2 to 3 hours. Keep it in freezer.

  Second Marination-:

1. Now take out the chicken from the freezer and leave it to bring in normal temperature. Now add lemon zest, fresh cream with the chicken strips and set aside for at least half an hour. 

2.      Move the lemon leaves out from the marinated chicken.

3.      Add bitten egg and corn flour with the chicken and mix and coat properly.

4.      Take a deep breath pan and add oil.

5.      Hit the oil.

6.      Make the flame low and add one by one chicken strips.

7.      Don’t add too much amount in one go.

8.      Fry in lower flame till the chicken done.

9.  Serve with your choice of sauce ( I made a delicious sauce  and served with it )
