1. Long Grained Rice-4cup
2. Shredded Chicken- 3 cup
3. Eggs-5
4. Chopped Spring onion- 1 cup
5. Salt- As per taste
6. Black Pepper powder- 2 table spoon
7. Green chili chopped- 2 teaspoon
8. White Vinegar- 2 teaspoon
9. Sugar- 1 teaspoon
10. Chili oil- 2 teaspoon ( if not available not a problem you can prepare it without this one also)
11. Chopped garlic small pieces- 1 and 1/2 cup
12. Onion finely chopped- ½ cup
13. Oil- 1-2 cup
14. Sweet chili garlic sauce- 1 tablespoon
15. Carrot chopped in peas sized dice shaped- 1 cup
16. Bean chopped same as carrot- ½ cup
17. Coriander leaves chopped – 1 cup
18. Black thick Soy Sauce- 2 teaspoon
19. Broccoli/ Cauliflower chopped in small sized- ½ cup (Optional)
20. Bell pepper red chopped same as carrot -1/2 cup
21. Capsicum chopped same as carrot- ½ cup
22. Ginger garlic paste- 1 tablespoon
23. Cornflower- 1 teaspoon
24. Ginger chopped in small pieces- ½ cup
25. Ginger garlic paste- 1 tablespoon
Method-:
1. Marinate the chicken with salt with ginger garlic paste and with cornflower.
2. (I have taken Basmati Sella Rice , you can take any long grain rice as per your choice) Soak it for 20 minutes.
3. Now take a deep breath pot, add water and make it hot.
4. Salt 1 teaspoon salt and 2 teaspoon oil in the hot water then add the rice.
5. Let the rice comes to boil.
6. Cooked the rice to 90% then rinse the water. Wash with cold water then Spread it and cool it. Fully Cooling of the rice is most important part of the dish. If the rice is not properly cooled down then it can’t able form its structure and the dish will be messed up.
7. Take a pan (affiliate link), add 4 teaspoons oil and hit it.
8. Swallow fry the chicken strips and keep aside
9. Fry the vegetables except coriander leaves and spring onion one by one & keep aside.
10. Beat the eggs and add salt, pepper and ½ teaspoon green chili.
11. Now brush one teaspoon oil in the pan.
12. Make omelets as more number as possible and make each one as thin as possible.
13. Now fold the omelets and cut into very thin strips and keep aside.
14. In the same pan add 1 teaspoon oil now add the garlic fry till golden brown. Keep aside
15. Now add onion and ginger chopped in the same pan and medium fry it, don’t make them golden brown, make the onion just transparent and ginger fried.
16. Now take a karai or deep breath pan and add remaining oil.
17. Add the garlic, ginger, onion and green chilies and vegetables and chicken. Now add sugar, salt , black pepper, chili oil and Soy Sauce.
18. Mixed all and cook for 7 minutes on medium to high fame.
19. Now add the rice, stir and mix.
20. Now add vinegar and Sweet Chili garlic sauce, black pepper powder, remaining green chili and ginger chopped.
21. Stir and cook for 5 minutes.
22. Add the Egg strips and mix.
23. Check the seasoning and garnish with spring onion and coriander leaves.
Mouth watering Burnt Garlic Chicken Rice is ready for serving.
