some fiery hot, some subtle and fragrant. My homestyle version strikes a
beautiful balance, with a luscious gravy that clings to each piece of meat,
making it the perfect companion to a plate of hot steamed rice.
In this post, I’ll take you through a step-by-step
journey to create this Mutton Curry — layered with flavour, finished with a
touch of ghee, and sure to win hearts at your dining table.

Ingredients:
For marination:
- Mutton pieces with bone — 500 gm
- Hung curd — 4 tbsp
- Turmeric powder — 1 tsp
- Red chili powder — 1.5 tsp
- Coriander powder — 2 tsp
- Cumin powder — 1.5 tsp
- Black pepper powder — 0.5 tsp
- Garam masala powder — 1 tsp
- Ginger garlic paste — 2 tbsp
- Salt — to taste
For cooking:
- Oil — 4 tbsp
- Ghee — 1 tsp
- Sugar — a pinch
- Whole spices:
- Bay leaf — 2
- Cinnamon stick — 2 small
- Cloves — 4-5
- Green cardamom — 3
- Black cardamom — 1
- Onions — 3 medium, sliced
- Hot water — as required

For final tadka:
- Ghee — 1 tbsp
- Reserved masala from cooked mutton
- Optional for serving:
- Steamed rice
- Coriander leaves
- Onion slices, lime wedges

Step-by-step method:
Step 1: Prepare all ingredients.
👉 Clean the mutton pieces.
👉 Arrange spice box and all cooking ingredients.
Step 2: Marinate the mutton.
👉 In a large bowl, add hung curd, all powdered spices, ginger garlic paste, and salt.
👉 Mix well with mutton. Rest for 1 hour.
Step 3: Temper and sauté.
👉 Heat oil + ghee in a karai.
👉 Add pinch of sugar → caramelize.
👉 Add bay leaf, cinnamon stick, cloves, green and black cardamom.
👉 Sauté till aromatic.
👉 Add sliced onions → sauté till light golden.
👉 Add marinated mutton + salt → mix well.
Step 4: Simmer and cook.
👉 Add required hot water → mix into masala.
👉 Cover with lid → cook till mutton is tender.
Step 5: Oil separation stage.
👉 Once mutton is tender → open lid.
👉 Cook till oil floats on top → gravy thickens.
Step 6: Final tadka.
👉 Heat ghee in a small pan.
👉 Add reserved masala from mutton → sauté.
👉 Pour back into mutton → mix well → simmer for 2 mins.
Step 7: Serve hot.
👉 Garnish with coriander.
👉 Serve with steamed rice, onion slices, lime wedges.
