Ingredients-:
1. Chicken pieces whole legs and breast(skin off, bone in)- 2 kg
2. Hung Curd- 200 gram
3. Butter- 250 gram
4. Grated Cheese- 1 cup
5. Fresh Cream- 100 ml
6. Ginger paste- 2 tablespoon
7. Garlic Paste- 2 tablespoon
8. Stone Flower – 7 (Make powder of it if not possible then crush it)
9. Sugar- As per Taste
10. Salt- As per Taste
11. Oil- ½ cup
12. Kashmiri Chili Powder- 1 cup
13. Black pepper powder- tablespoon
14. Chili Powder- 1 tablespoon
15. Green Chili Paste- 1 table spoon
16. Lemon Juice- 1 cup
17. Roasted gram flour powder-1 cup
18. Chat Masala- 2 tablespoon
19. Ghee- 2 teaspoon
Method-:
1. Slit the chicken pieces after washing and drying
First Marination-:
a) Take a bowl add chicken pieces.
b) Add lemon juice, ginger garlic paste and 1 teaspoon salt. Mix properly
c) Now rub the mixture on the chicken pieces thoroughly
d) Let it rest for at least 2 hrs in freeze.
Second Marination-:
i) Add curd, all spices, stone flower powder, greeted cheese, cream, green chili paste, roasted gram flour powder. Check the marination if needed add salt. Rub all the mixture with the chicken again and rest for another 2 to 3 hrs.
Preparation-:
1. Preheat the oven on 180 degree Celsius for 20 minutes
2. Smoke the chicken- This step is absolutely Optional-: choose a pan or bowl which can cover easily. Then add the chicken in it. Make a space in between the chicken. Now burn a charcoal, when it hot enough, put it in a small bowl and pour 2/3 tablespoon ghee immediately. Now place the bowl in between the chicken and cover the whole bowl. Let it smoke for 5/7 minutes.
3. Add aluminum foil on iron the iron tray
4. Now place the track on the tray.
5. Now add chicken pieces one by one as many as possible. Maintain atleast 1 inch space between two pieces.
6. Brush butter on the top of the piece.
7. Put on grill mode on 180 degree Celsius for 35 minutes.
8. Put the track on the top shelf of the oven and Let the chicken be grilled.
9. After that take the chicken out. Flip the chicken and brush butter on that side. Then
10. Then again put the chicken on grill mode for 20 minutes on same temperature.
11. Again flip , brush and grill for 20 minutes on same temperature.
12. Then again brush with butter to the chicken on each side and put on broil mode for 20 minutes at least.
13. Sprinkle chat masala and lime juice over the pieces and serve hot with mint or coriander chutney or dip.
