Stuffed Uttapam Recipe Crispy South Indian Breakfast

For Batter-:

  • 1. Suji or Samolina- 2 Cups
  • 2. Hung Curd- 1 cup
  • 3. Water- As required
  • 4. Baking Soda- 1.5 Teaspoon


For Staffing-:

  1.  Lightly Mashed Boiled Potatoes-4/5 medium
  2. Corainder Powder- 2 teaspoon
  3. Chatmasala- 1 teaspoon
  4. Cumin powder- 1 teaspoon
  5. Garam Masala-1 teaspoon
  6. Salt  and Sugar – As required
  7. Lemon juice- 2 teaspoons
  8. Ginger paste- 2 teaspoons
  9. Black Pepper Powder- 1 teaspoon
  10. Hing- 1 pinch
  11. Finely grated carrot  and vegetables as my your choice- 1 cup


For Tarka/ Tempering -:

  1.  Curry Leaves- 2 cups
  2. Coriander Leaves- 1 cup
  3. Mastered Seeds- 1 tablespoon
  4. Grated Coconut – ½ cup
  5. Green Chili chopped- 2 teaspoons
  6. Oil- 1 cup


Process-:

  1. Take a medium size bowl and add suji, curd, baking soda and required water. Stir well. Make a lump free batter. Batter should be thick yet pourable.
  2. Cover it and rest for 10 minutes.
  3. In another bowl add lightly mashed potatoes, add spices, grated vegetables and mix it.
  4. Now prepare the Tarka or tempering. Take small pan add oil.  when oil heated well then add the mastered seed when it comes to splatter then add coconut, curry leave, coriander leave, chopped chilies. Fry for two to three minutes.
  5. Add this tarka in batter and in stuffing in equal amount.  Mixed properly in both.
  6. Take a pan. Hit it well and brush oil.
  7. Spread the batter. Let it be fried for 2 to 3 minutes. Then pour the potato staffing in the middle. Cook for sometimes. Then cover it with the batter again. Again cook for 4 minutes.
  8. Flip and fry the other side.
  9. Cook the uttapam on medium heat.
  10. Fry the both sides till crispy.
  11. Serve the uttapam with green chutney and with your smile.
