Dhaba Style Spicy Amritsari Murg Curry Recipe

Rich, spicy, and full of bold Punjabi flavors — this is Amritsari Murg Curry at its best! A soulful Punjabi-style chicken curry, known for its masaledar (spicy) gravy and tender chicken pieces, straight from the heart of Amritsar’s dhabas. Perfect to pair with steamed rice, roti, or naan, this curry is all about comfort and authentic taste. Made with simple ingredients but cooked with love, this recipe brings the essence of Punjab right into your kitchen. No fancy tricks — just good food, done right!


Ingredients-:

      1.   Chicken normal cut- 1 kg
2.   Onion- 3 big chopped
3.  Tomato – 2 big chopped 
4.  Butter- 1 tablespoon
5.  Fresh Cream - 2 tablespoon

 For Marination-:

1.  Ginger Garlic paste- 1 tablespoon

2.   Ghee- 2 teaspoon

3.   Curd- 2 tablespoon

4.    Oil- 1 and ½ teaspoon

5.    Dry Fenugreek leaf- 1 teaspoon (Kasuri Methi)

6.    Red Chili powder- 1 teaspoon

7.    Coriander Powder- 1 teaspoon

8.    Turmeric Powder- ½ teaspoon   

 For Special Spices-:

1.   Black pepper Seed- 1 tablespoon

2.   Coriander Seeds- 1 tablespoon

3.    Black Cardamom- 2

4.    Dry Fenugreak seeds- ¼ teaspoon

5.    Green Cardamom-3-4

6.    Cloves- 5-4

7.    Cumin Seeds- ½ teaspoon

8.    Black Mastered Seeds- ¼ teaspoon

        
            Roast all the ingredients in a dry pan with salt. Let it cool. Then grind it in a                 smooth powder.

 

Process-:

1.      Take a karai/ deep breath pan. Add oil. Let it be heated.

2.      Fry marinated chicken by 50% then keep them aside.

3.      Again add oil in the pan.

4.      Add onion, fry till light brown.

5.      Now add special spice 2 table spoon on the fried onion , stir well.

6.      In the same pan add chopped tomatoes.

7.      Cook till tomato gets soft. Then add curd  and required amount of  salt and sugar.          Mix well.

8.      Then add fried chicken and remaining amount of marination. Stir Well. 

9.      Cook for 7 to 8 minutes on low flame.

10.   Add water, mix well. Cover and cook till tender.

11.   For seasoning add melted butter and fresh cream. Lastly sprinkle chopped coriander    leaves.
