Ingredients:
· 500g chicken (drumsticks/wings or boneless pieces)
· 2 tbsp coriander paste
· 1 tbsp aamchur powder (dry mango powder)
· ½ cup curd (yogurt)
· 1 tbsp ginger-garlic paste
· 1 tsp red chili powder
· 1 tsp cumin powder
· ½ tsp turmeric powder
· ½ tsp garam masala
· 1 tbsp lemon juice
· 1 tbsp toasted gram flour (besan) – optional for extra crispiness
· Salt to taste
· 2 tbsp oil or ghee
· Charcoal for extra smoky flavor (optional)
Instructions:
1. Marinate the Chicken:
· In a bowl, mix curd, coriander paste, aamchur powder, ginger-garlic paste, lemon juice, and all the spices.
· Add chicken pieces, coat well, and let it marinate for at least 1 hour (overnight for best results).
2. Cooking on Gas-Oven:
· Heat a heavy-bottomed pan or tawa with 2 tbsp oil.
· Cook the chicken on medium heat, flipping occasionally, until golden brown and cooked through (about 15-20 minutes).
3. Charring for Smoky Flavor:
· Once cooked, place the chicken directly on an open gas flame for a few seconds until it gets a nice char. Be careful not to burn it too much!
