A hugely popular delicious dish of Bengal or you can say one of  the signature dish of Bengal named Paturi. Generally it prepared using Ilish (hilsa fish), Bhetki (Barramundi fish) and chingri (prawn).The word "Paturi" means leaf, in Bengali. This mouth watering dish prepared inside banana leaves, make a and steam.  Fish is marinated with mustard paste, mustard oil and other spices and wrapped in banana leaf and then cooked over a low flame. The aroma of the dish is so luscious that after in hailing it you automatically feeling hungry and taste is heavenly. I have tried to prepare the dish in Vegetarian way maintaining the balance of its delectable taste and flavor. In  vegetarian way also it’s really taste great.

 

 Ingredients-:

1.      Home Made Cottage Cheese mashed- 1 cup

2.      Mashed Paneer – 1 cup

3.      Grated Coconut – 3 table spoon

4.      Green Chili Paste- 2 teaspoon

5.      Turmeric Powder -1 teaspoon

6.      Salt- As required

7.      Sugar – 1 teaspoon

8.      Mustard Oil – ½ cup

9.      Banana Leaves 8’x8’ Square-  8

10.   Slit green chilies -6

11.   Mashed Potatoes – ½ cup

12.   Raisin Paste- 1 tablespoon

13.   Poppy seed Paste- 1 tablespoon

14.   Mustard Paste- 4 tablespoon








Process-:

1.      Mash the paneer well in a bowl. Mix it with homemade cottage cheese mashed.

2.      Now add potato mashed in the bowl.

3.      Mix well.

4.      Add grated coconut, poppy seed paste, raisin paste, mustered paste , sugar, salt,  green chili paste, turmeric powder.

5.      Mixed all ingredients properly and prepare a mold.

6.      Sprinkle some water to the banana leaves and micro for 2 minutes. 

7.      Split the mixture into equal portion, as per your requirement and place it on the leaf. Flatten with back of a teaspoon into a square shape. Brush oil and place slit chili top of it.

8.      Fold the banana leaf from both ends to make square parcel. Ties the four side with cord or with tooth pick.

9.      Now take non stick tawa or pan. Heat the pan. Brush one teaspoon oil, and place the parcels. Cover and cook for 5 to 7 minutes on medium to low flame. Then turn each parcel again cook for 5 to 7 minutes. Sprinkle some oil as per need.
